Inspired by the sandwich of the same name from my days at Northeastern.
Ingredients
- 2 slices sourdough bread
- 1 packet guacamole
- 3 breaded chicken tenders
- 2 slices tomato
- 1 tbsp sriracha
- 2 tbsp honey
- Bunch of arugula
- 2 slices Monterey Jack cheese
Directions
- Pre-heat the panini press to sear.
- Heat a small pan to medium-low with the sriracha and honey. Mix and cook until bubbling.
- Turn off the heat and toss the tenders in the sauce.
- Now it’s time to assemble the sandwiches! Assemble as follows
- Bread with guacamole spread on top
- Chicken tenders in sauce
- Tomato slices
- Monterey Jack cheese slices
- Arugula
- Bread with guacamole spread on bottom
- Place on the panini press and sear until golden brown on top. Enjoy!
